BAJA SHRIMP SALAD

  • 1/2 pound cooked shrimp, thawed and drained (or shelled and cooled)
  • 1/2 cucumber, peeled, seeded, and thinly sliced
  • 6 radishes, thinly sliced
  • 2 scallions, sliced
  • 1/4 cup white wine vinegar
  • 1 1/2 tsp. Sugar
Combine all ingredients in a bowl and toss well. Chill.

2 servings, 4 POINTS each
