- 1 lb cooking apples
- 1 juice of 1 lemon
- 1 cup of fresh blackberries
- a/4 c. gluten free flour
- 1/4 c. gluten free rolled oats
- 3 tbsp canola oil
- a/4 c finely chopped pitted dates
- 1/4 unsalted sunflower seeds
- cooking spray.
- Preparation time 25 minutes
- preheat 400 degrees
- core and slice the unpeeled apples and sprinkle with lemon juice. Place in med saucepan with blackberries. Cook over med-low heat and bring to simmer for approx 5 min.
- Pour cooked fruit into baking dish.
- In a separate bowl, mix the flour and oats, rub in the oil and stir until mixture resembles crumbs. You may need to add a little bit more oil. to reached desired texture. Stir in dates and sunflower seed. Sprinkle mixture over fruit.
Bake for 25 minutes. Makes 4 servings at 273 calories.
