Shrimp Pufflets

Makes about 20.

  • 1 can (4oz.) tiny shrimp, drained
  • 1/3 c mayonnaise
  • 2 T grated Parmesan cheese
  • 1/2 t basil leaves
  • 2 egg whites, stiffly beaten

Preheat oven to 350 degrees. In medium bowl, combine shrimp, mayonnaise, cheese and basil. Fold in egg whites. Drop by tablespoonfuls on foil-lined, well-buttered, cookie sheet. Bake for 20
minutes or until golden brown. Serve warm.
