Vegetarian Black Bean Chili w/Orange, Cumin & Cinnamon
- 2 oranges
- 2 T olive oil
- 2 c chopped onions
- 4 garlic cloves, minced
- 4 t chili powder
- 4 t ground cumin
- 2 t ground cinnamon
- 3 (15 oz) cans black beans, drained
- salt & pepper
- 1 1/2 c water to think if needed
- sour cream substitute, cilantro leaves & organic blue tortilla chips for garnish
- Grate enough orange peel to measure 1 1/2 t & juice oranges (about 1 c juice).
- Heat oil in heavy large saucepan over medium-high heat. Add onions & saute 5 min. Mix in garlic & spices. Add beans, tomatoes & half of orange juice.
- Simmer over medium heat until heated through and flavors blend, stirring often, about 15 min. Mix in orange peel & remaining orange juice. Add water to think if necessary & season to taste with salt & pepper.
- Ladle in bowls and top with sour cream substitute, cilantro leaves and a blue corn tortilla chip.
