1/2 cup water
1 onion -- chopped
1 carrot -- thinly sliced
1 green bell pepper -- chopped
1 tomato -- chopped
1/2 teaspoon ground cumin
1/4 teaspoon cinnamon
1/4 teaspoon turmeric
1 can garbanzo beans -- (15 ounce) drained and rinsed
4 green onions -- chopped
2 tablespoons green chiles -- chopped, canned
3 cups vegetable broth
2 cups couscous
1/4 cup chopped fresh parsley
freshly ground black pepper -- to taste
Place the water in a large saucepan. Add the onion, carrot, bell pepper, and tomato. Cook, stirring occasionally, for 5 minutes. Add the spices and mix well. Add the remaining ingredients, except for the parsley and pepper.
Bring to a boil, cover, remove from heat, and let rest for 5 minutes. Stir in the parsley and pepper. Serve at once.
