Black-Eyed Peas & Kale

2 cups dried black-eyed peas, sorted, rinsed, soaked overnight, drained
1 onion, chopped
1 bunch kale, chopped
1 can diced tomatoes
2 teaspoons salt
6 cups water

Place black-eyed peas & onion in crockpot. Add tomatoes, water, salt and kale. Cook on high for 8 – 10 hours.
