- 1 tablespoon vegetable oil
- 1 clove garlic-peeled and chopped
- 1 small onion-peeled and chopped
- 1 pound lean ground turkey
- 1 can corn kernels- 11 oz.
- 1 can diced tomato- 14.5 oz.
- 1 jar salsa (small)
- 1 can tomato sauce- 8 oz.
- 1.5 tablespoons chili powder- to taste
- 1 tablespoon ground cumin- to taste
- 1 pinch salt and pepper -totaste
- Heat a deep pot over medium high heat
- Add oil and onion and sauté' 3 to 5 minutes.
- Add garlic and cook 1 minute more.
- Add turkey and brown 5 minutes.
- Add salsa, corn, tomato sauce, and tomatoes.
- Bring to a bubble, add spices, salt and pepper.
- Reduce heat and simmer 10 minutes.
Serving suggestions: serve with baked tortilla chips and low fat shredded cheese or for something different, serve over rice or on a baked potato.
Variations: add some Tabasco sauce for extra flavor, or add some dark red kidney beans for additional texture/taste.
