Vegetarian Soft Tacos

  • 1/2 cup diced tomato
  • 1/2 cup drained, canned black beans
  • 1/2 cup cooked brown rice
  • 1/4 cup chopped onion
  • Minced cilantro and lime juice to taste
  • 2 - four inch, fat free flour tortillas
  • Shredded lettuce
  • 2 Tbsp fat free sour cream
  • 2 Tbsp fat-free salsa
  1. In bowl combine tomato, beans, rice, onion, cilantro and lime juice.
  2. Divide onto tortillas and top with lettuce, sour cream and salsa. Fold to close.
Makes 1 serving - 5 pts
