Vegetarian Soft Tacos
- 1/2 cup diced tomato
- 1/2 cup drained, canned black beans
- 1/2 cup cooked brown rice
- 1/4 cup chopped onion
- Minced cilantro and lime juice to taste
- 2 - four inch, fat free flour tortillas
- Shredded lettuce
- 2 Tbsp fat free sour cream
- 2 Tbsp fat-free salsa
- In bowl combine tomato, beans, rice, onion, cilantro and lime juice.
- Divide onto tortillas and top with lettuce, sour cream and salsa. Fold to close.
Makes 1 serving - 5 pts
