Nice N Nutty Cucumber Salad


* 3 cups (about 2 medium) cucumbers, thinly sliced, seeded and peeled
* 3 tablespoons rice vinegar
* 1 teaspoon sugar (sweetener)
* 2 teaspoons dark sesame oil
* 1/ 2 salt
* 2 tablespoons green onions, chopped
* 11/2 tablespoons unsalted dry-roasted peanuts, chopped


1. Combine first five ingredients in a medium bowl; toss to coat cucumber.
2. Sprinkle with onions and peanuts.
