Black Bean Hummus

  • 1- 15 oz. Can Black Beans, drained and rinsed
  • 1 Clove Garlic, minced
  • Juice of One Lemon
  • 1 Tbsp Tahini
  • ½ Tsp Cumin
  • ½ Tsp Sea Salt
  • ¼ Tsp Cayenne Pepper
  • 1 Fresh, Ripe Tomato, chopped
  • 1 Small Can of Corn Niblets, drained
Combine all ingredients, except tomato and corn, in a food processor and blend until smooth. Transfer to a bowl and fold in tomato and corn. Serve. Keep refrigerated.
