Mango Cucumber Salsa

Serves 2
  • 1 firm-ripe small mango
  • 1/3 English cucumber
  • 2 Tlsp finely chopped scallion ( or green onion)
  • 2 Tlsp fresh orange juice
  • 1 tsp fresh lime juice
  • ½ tsp extra virgin olive oil (EVOO)
  1. Cut mango in ¼ inch dice
  2. Halve and seed cuke – cut in ¼ inch dice. Add to mango in small bowl.
  3. Stir remaining ingredients together and add.
  4. Season with salt and pepper.
