Cucumber Salad

ngredients:

1-2 large cucumbers, sliced thin
1 bunch radishes, sliced thin into discs
3 scallions, white part and partial greens, also cut into thin discs
1/2 cup chopped peanuts
1/2 cup rice vinegar
1 teaspoon sugar
crushed red pepper flakes to taste

Directions:
Combine all ingredients. Serve chilled. Best eaten the same day.
