Zucchini Pancakes

  • Grated Zucchini (about 1)
  • Grated Onion (grated, to release the water for flavoring) (around 1/4 c.)
  • Lemon Zest (to taste)
  • Crushed Garlic (to taste, for worry of carbs)
  • Eggs (2)
  • Milk (enough to loosen)
Mix it into a chunky "batter", and then sautee them in oil. Put down one layer, then a thin layer of goat cheese, and another layer of zucchini, so that it made a pocket..

This seems to be too heavy a diet for consumption on daily basis. Maybe, you could eat it once in a week
