Ornish Diet Italian Pasta Sauce

Ingredients:

  • 1 28oz Can Crushed Tomatoes
  • 1 28oz Can Diced Tomatoes
  • 1 Medium Vidalia or other sweet onion coarsely chopped
  • 4 large garlic cloves minced or sliced depending if you like bigger pieces
  • 1 small handful coarsely chopped fresh basil leaves
  • dash ground allspice
  • dash ground cinnamon
  • dash red pepper flakes
  • dash dried thyme leaves
Instructions:

  1. For best results, use a large, heavyweight pan that is either non-stick or is not prone to sticking.
  2. Saute' the onions and garlic in a little water until the onions are translucent. Do not brown the onions or the garlic! Just saute' them until they are soft and translucent.
  3. Add the chopped basil leaves and red pepper flakes and saute' about a minute.
  4. Add the crushed and diced tomatoes.
  5. Stir well, then add the allspice, cinnamon and thyme. (Be careful don't add too much allspice and cinnamon, they are used to round out the flavor but can dominate if you aren't careful!)
  6. Simmer gently for about 30 minutes, stirring every 5 minutes or so to prevent any sticking.
  7. Then, enjoy on your fav whole grain pasta
