Grilled Oatmeal
- 3 c. water
- 1 c. skim milk
- 2-3 T. splenda
- 1-1/2 c. steel cut oats
- 1 T. smart balance
- 1 T. canola oil
In large saucepan, put water, milk, and splenda. Bring to a boil and stir in oats. Reduce heat to low and simmer 20 minutes, stirring constantly, until very thick. Spoon into a PAM-sprayed 7x11-pan and cool to room temperature. Cover with plastic wrap and refrigerate at least 2 hours or overnight. Use a sharp knife and spatula to cut 8 triangles. In a skillet, place smart balance and oil. On medium heat, cook the oatmeal triangles to brown each side, about 2 minutes per side, being careful not to burn. Serve with favorite oatmeal toppings: sugar-free syrup or fruit compote or whipped cream.

Same basic idea but vastly improved process for those with "George Foreman" style grill using waffle plates (about 10 x 7 inches).
Dry ingredients;
[use 3 types of oats]
1) 60g steel cut oats
2) 50g old fashion oats
3) 50g quick oats
4) 15g powdered (dry) milk
5) 15g raisins
6) 3 Tbsp sucralose
7) 35g whole wheat flour
8) Hefty dose of cinnamon
Wet ingredients;
9) 1 cup water
10) 1 Tbsp olive oil
1) Preheat grill to 375 degress with waffle plates
[usually 6 minutes]
2) Combine and mix first 8 dry ingredients
(use pyrex or metal bowl because liquid will be HOT)
3) Microwave water + oil for 3 minutes [700 Watt microwave]
Use a glass measuring cup. It should begin to boil.
4) Pour liquid over dry ingredients, stir well to form thick batter(1-2 minutes). I prefer a wide rice paddle for mixing.
Procedure;
1) Spoon out the thick batter onto the grill with the rice paddle.
2) Use oven mitts and press down firmly on the grill to squeeze the batter well. Don't worry, it won't overflow.
3) Hold down for 2 minutes [notice lots of steam escaping]
4) Cook for 19 minutes more.
5) Grilled oat cakes EASILY pop off the grill. Use a plastic tool.
6) Allow to cool on a rack 1-2 hours before wrapping in plastic. Oat cakes continue to dry (lose moisture).
7) Easily stays crunchy without refrigeration for 7-10 days.
Hint: You can make about 3 batches in an hour by prepping the successive batches just prior to removing the previous one from the grill. Saves on overall cleanup time too.
