* 4 cups vegetable broth
* 1 chopped onion
* 1 chopped celery stalk
* 1 14.5-ounce can Italian style stewed tomatoes
* 1/2 cup uncooked small pasta
* 1 15-ounce can kidney beans, drained and rinsed
* 1 15-ounce can cannellini beans, drained and rinsed
* 1 16-ounce package frozen Italian style mixed vegetables
* 2 teaspoons parsley flakes
* 1/2 teaspoon basil
* 1/2 teaspoon oregano
* 1/2 teaspoon marjoram
* fresh ground pepper to taste
* soy parmesan (optional)
Place onion and celery in a large pot with 1/4 cup of the vegetable broth. Cook, stirring occasionally for 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat, cover and simmer for 30 minutes. Sprinkle with soy parmesan cheese, if desired.
