- 2 oz dry cellophane noodles or bean thread noodles
- vegetable broth (optional)
- 2 cups peeled, seeded, and sliced cucumbers
- 2 cups thinly sliced red bell peppers
- 1 cup no-oil Italian dressing or vinaigrette
- 1 tbsp freshly minced basil
- 1 tbsp freshly minced cilantro
- 1/8 tsp red hot chili flakes
- lettuce
Toss all ingredients together and marinate for at least 1 hour. Serve on a bed of lettuce.
